Meatless Monday: Loaded Baked Potato

It's Meatless Monday. Put a new twist on loaded baked potatoes by topping them with salsa-seasoned Grillers® Recipe Crumbles®, fresh broccoli and cheddar cheese. WOW you taste buds.

Broccoli is rich with vitamins C, A and K (which helps with bone health) and A, as well as folate. There is another reason broccoli frequently earns a top spot on “superfoods” lists: it delivers a healthy dose of sulforaphane, which reduces risk of breast cancer, lung cancer, stomach and colon cancer by helping to stimulate the body’s detoxifying enzymes.

Potatoes arrived in the Colonies in 1621 when the Governor of Bermuda, Nathaniel Butler, sent two large cedar chests containing potatoes and other vegetables to Governor Francis Wyatt of Virginia at Jamestown.

French Fries were introduced to the U.S. when Thomas Jefferson served them in the White House during his Presidency of 1801-1809.

During the Alaskan Klondike gold rush, (1897-1898) potatoes were practically worth their weight in gold.

Potatoes were valued for their vitamin C. And gold, at that time, was more plentiful than nutritious foods!
In October 1995, the potato became the first vegetable to be grown in space.

Loaded Baked Potatoes
Serves 2

2 baking potatoes (about 6 oz. each)
2 sliced green onions
1 teaspoon vegetable oil
1/2 cup salsa
1/2 teaspoon vegetarian Worcestershire sauce or soy sauce
3/4 cup Morningstar Farms® Meal Starters Grillers® Recipe Crumbles™
1/2 cup small broccoli florets
1/4 cup (1 oz.) shredded cheddar cheese

Scrub and prick potatoes. Bake at 425°F for 50 to 60 minutes or until tender*.

Meanwhile, in small saucepan cook onion in oil over medium heat until tender. Stir in MORNINGSTAR FARMS MEAL STARTERS GRILLERS RECIPE CRUMBLES, salsa and Worcestershire sauce. Cook over medium heat until crumbles are hot and most of the liquid is absorbed, stirring occasionally. Stir in broccoli. Remove from heat.

Using hot pad, gently roll potato under your hand. Cut a crisscross in each top. Press in and up on ends of each potato. Spoon salsa mixture on top. Sprinkle with cheese. Let stand about 2 minutes or until cheese melts.

*Note: If desired, instead of baking potatoes, place scrubbed and pricked potatoes on microwave-safe plate. Microwave, uncovered, at high for 11 to 15 minutes or until tender, turning potatoes over every 4 minutes.
