Meatless Monday: Seitan-Cashew Blanquette

It's Meatless Monday. This is an amazing gourmet meal that is easy to make and easy on the budget, too.

Blanquette is traditionally a ragout made from lamb, veal, or chicken paired with a white cream sauce, but here, tempeh takes the staring role.

Something Different: How to Make Pot Stickers

When my children were growing up, I used to make Lumpias. Yummy! Today, I don't have small children's hungry mouths to fill, so I modified the recipe for me and my honey.

I make pot stickers which are a smaller version. I simply use wonton wrappers instead of egg roll or spring roll wrappers.

Pop's Cilantro Sour Cream

Love Food: Mom's Chile Corn Casserole

Serving mom's chile corn casserole anytime is a wonderful treat, but it is most welcome when the kids and their kids gather together for the Christmas meal. 

The children love my corn "pudding" casserole  that I often make for Christmas dinner. Along these same lines, last evening I made corn chowder with green chili much like my corn pudding.

That's a favorite time to make and bake my traditional corn casserole. It's unique and more like a chili corn casserole than the plain corn casserole recipes you see in cookbooks today.

Love Food: Mom's Delicious Homemade Refried Beans

To make mom's homemade refried beans, start with a 16 oz package (1 lb.) of pinto beans, sometimes called frijoles pintos.

I must say that one time, and I mean one time only, I bought a can of prepared refried beans. They were dense so I doctored them up a bit: They passed, but holy cow, never again.

The taste of homemade beans cannot be beat, and a bag of pinto beans is pennies, merely pennies.

Open the package and wash well. Even today's clean cooking foods need a bath, especially dried foods such as pinto beans.

Cranberry-Jalapeno Relish

This is an easy recipe to make. The relish makes a surprising compliment to just about any dish. Set it on the table in a pretty glass bowl with a little spoon. 

It takes about 35 minutes to prepare, makes 3 cups of relish, and it is so tasty as a side flavor to scrambled eggs, turkey sandwiches, and even a chicken casserole dinner.  Spoon it potatoes. Awesome!
