Blessing Breakfast: Mom's Egg and Hash Brown Casserole

"Bless us, O Lord, and these thy gifts, which we are about to receive from thy bounty, through Christ our Lord. Amen."
 
Here's a delicious quick-fix egg and hash brown casserole recipe. It came about because last night my honey came home a little late. It was too late for our regular dinner, but not too late and he was still hungry.

What I call "a little meal" was in order. I don't like to eat a heavy meat and potato dinner after 7pm.

Who doesn’t love doughnuts? (Or donuts, if that’s how you prefer to spell it!) I was particularly interested in how doughnuts became so popular, especially since I am a diabetic and if I indulge in a yummy snack like the donut… well, "don't eat" has always been a challenge. Anyway…

It's Eat Fruit Friday. Grapes are in season. A grape is a fruiting berry of the deciduous woody vines.

Grapes are a type of fruit that grow in clusters of 15 to 300, and can be crimson, black, dark blue, yellow, green, orange and pink. "White" grapes are actually green in color, and are evolutionarily derived from the purple grape.

Grapes can be eaten raw or they can be used for making wine, jam, juice, jelly, grape seed extract, raisins, vinegar, and grape seed oil. Grapes are a non-climacteric type of fruit, generally occurring in clusters. Store fresh grapes in the refrigerator.

The inspiration for this burrito beauty recipe came from those served at the Santa Fe Farmers Market in New Mexico.

Eat Fruit Friday: Grapefruit

It's Eat Fruit Friday. Grapefruits are in season. The grapefruit is a subtropical citrus tree known for its sour to semi-sweet fruit. It's an 18th-century hybrid first bred in Barbados. When found, it was named the "forbidden fruit.

The varieties of Texas and Florida grapefruit include: Oro Blanco, Ruby Red, Pink, Thompson, White Marsh, Flame, Star Ruby, Duncan, and Pummelo HB". The United States is the top producer of grapefruit and pomelo followed by China and South Africa.

Grapefruit is a Superfood. It's delicious for breakfast, but it can be a tart taste and may need a sprinkle of sugar or sugar substitute.

It's Eat Fruit Friday. The pineapple is a tropical plant. Enjoy pineapples fresh, cooked, juiced and preserved. The pineapple leaves are used to produce a textile fiber called piña in the Philippines, which is made into material for men's  and women's formal wear.

The fiber is also used as a component for wallpaper and other furnishings. Store fresh pineapple on the countertop away from direct sunlight.

Here's a wonderful breakfast for any morning. It's quick to make, especially if you make the bacon crumbles and cooked potatoes the day before. Shred the cheeses and cover with plastic wrap.

You can make this taste treat in about 10 minutes, or 20 minutes if you haven't pre-prepared the bacon and potatoes.

DF Soft Boiled Eggs for Diabetics

Here are my eggs for diabetics. It's how I cook soft boiled eggs and plan a meal around the eggs that I like to eat right up like a kid in a candy store.

Being a diabetic, I know that I need protein. I can get protein from eggs, which is great because I love eggs. I thought I couldn't eat eggs anymore, but I can eat 1 to 3 eggs a week to get the good food protein benefits.

I didn't have high blood cholesterol, but not paying attention as I should have put me with a cholesterol problem plus high blood pressure. I pay attention now.

Blessing Breakfast: Chipotle Turkey Bagel Thins®

This week, from Thomas Breads, it's beautiful bagels stuffed with curly lettuce, turkey and tomato. Pair this bagel bite with chilled potato salad and a fresh fruit dessert. 

Bagel is a bread product originating from Poland, traditionally shaped by hand into the form of a ring from yeasted wheat dough, roughly hand-sized, which is first boiled for a short time in water and then baked. The result is a dense, chewy, doughy interior with a browned and sometimes crisp exterior.

Artificial strawberry flavoring is also used in many products like hand sanitizers, lip gloss, perfume and many others.

Blessing Breakfast- Melt-in-Your-Mouth Chilaquiles

This is a Mexican meal that could be made like a casserole to serve a crowd. My dad used to make Chilaquiles every Thanksgiving and Christmas.

When I'm making it, the good-food smell makes me feel like I am six years old standing next to my dad in the kitchen waiting to put a spoonful of this concoction in my mouth.

Catholicism: The Mantilla

 

Every day is a holiday
when I live God’s good life
He meant for me.

I don’t remember exactly when I got my mantilla. It feels as if I’ve had it forever.  

It’s a beautiful white lace veil. When I put it on my head, it fell below my shoulders. I wore it when I went to church. I was in church for mass every weekday, Sunday and for the sacrament of confession, and choir practice. I said the Stations of the Cross. I prayed and lit a candle. I was baptized in church and made my 1st Communion among many other times.

My mantilla is beautiful. I saved it to wear when my daddy walked me down the aisle on my wedding day. Unfortunately for me, I wasn’t able to have the church wedding I dreamed about. I still have my mantilla, and it’s in prestine condition.

t's time to turn the clock back an hour if you're on daylight saving time. Daylight Saving Time begins on Sunday, March 10 (in 35 days) ends Sunday, November 3, 2024.

When you set the clock back an hour, you actually gain an hour of sleep. If your alarm clock goes off at 7am, you're really waking up at 8am.

What a wonderful time for a slice of warm Easter Breakfast Bread. This Easter Siinday is on March 31st.

Eat Fruit Friday: Pomegranates


It's Eat Fruit Friday. Pomegranates are in season. The pomegranate originated in the region between the Himalayas and Egypt. Today, it's grown in California and Arizona. It's considered a fruit berry, between the size of a lemon and a grapefruit.

After the pomegranate is opened by scoring it with a knife and breaking it open, the seeds are separated from the peel and internal white pulp membranes. Separating the seeds is easier in a bowl of water because the seeds sink and the inedible pulp floats. It has sour notes and is typically found in juices, sauces and salad dressing.

In Mexico, they are commonly used as a garnish for traditional Mexican chiles en nogada, which consists of poblano chiles filled with picadillo (a mixture usually containing shredded meat, aromatics, fruits and spices) topped with a walnut-based cream sauce and pomegranate seeds.

Store fresh pomegranates on the countertop away from direct sunlight.
