Here's a wonderful breakfast for any morning. It's quick to make,
especially if you make the bacon crumbles and cooked potatoes the day
before. Shred the cheeses and cover with plastic wrap.
You can make this taste treat in about 10 minutes, or 20 minutes if you haven't pre-prepared the bacon and potatoes.
Farmer's Fry
Ingredients:
6 bacon strips, fried crisp, crumbled
2 tablespoons onion, diced
3 medium potatoes, cubed small, cooked
6 eggs, beaten with fork
Salt and pepper to taste
1/2 cup cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
Sour cream
Doll it up for a colorful holiday look: Sprinkle pimento bits, chopped chives, sliced black olives on top of each plate.
Directions:
In a skillet or oven, fry or bake bacon until crispy. Remove to paper towel, drain, cook, crumble.
Save drippings, add drippings to skillet; sauté onion and potatoes in the dripping until potatoes are brown (about 5 minutes).
Slowly pour the beaten eggs into skillet; cook and stir gently until eggs are set and cooked to desired doneness. Season with salt and pepper.
Sprinkle with cheese and bacon; let stand for 2-3 minutes or until cheese melts. Serve warm. Pass the sour cream.
