Here's How to Oven Roast Asparagus with Delicious, Mouth Watering Results

Roasted Asparagus with Garlic Mayonnaise sauce is healthy way to eat vegetables. Asparagus is a wonderful side dish for just about any entree. I even fix myself a plate for lunch. The best part is that Asparagus is high in folic acid, potassium and fiber. It's loaded with Vitamin B6.

My Honey makes asparagus better than anyone. He grills or sautés asparagus in a hot iron skillet with extra virgin olive oil (EVOO).

At the last minute, he adds about a tablespoon of minced garlic, salt and pepper. I've never even tried to duplicate his recipe, because it's perfect the way he makes it. A big YUM!

Another way is to roast it in the oven. (One of the tricks I learned from my cooking classes.) Wash the asparagus and trim the rough ends off. I also peel the stems with a potato peeler so they are easier to eat. A common next step is to steam the spears, and some cooks even boil or braise them. I like the roast-in-the-oven method. Here's how easy this recipe is.

Oven Roasted Asparagus

Just spread the asparagus spears evenly on a baking sheet. Drizzle a couple tablespoons of extra virgin olive oil. Use your hands to make sure each of the stems gets a part of the drizzle.

Sprinkle the asparagus with kosher salt and freshly cracked pepper.

To roast, just slide your baking sheet in a preheated 400-degree oven for ten to twelve minutes. Be careful not to overcook.

Okay, now instead of adding  minced garlic like my honey does, make a garlic mayonnaise warm sauce. I especially like this because I use Smart Balance mayo. Good and healthy.

Sauce: To about 1/3 cup of the Smart Balance or your favorite mayonnaise, add a teaspoon or minced garlic (from ready jar or mince your own from fresh garlic clove). Stir gently.

When your oven-roasted asparagus are ready to serve, pass the plate with lemon slices and a bowl of this amazing garlic-mayonnaise sauce. Delicious.

Eat asparagus once a week. It's good food.

Tip: Many people, us included, buy asparagus in the can often because fresh asparagus turns out tough to eat. Canned asparagus is okay. We saved about 40% by buying a shelf full at Sam's Club. But fresh is really really good. Just remember to "peel" the stems with the potato peeler in your kitchen tools drawer.
