Old Fashioned Beanie Weenies

It's a blast from the past with beanie weenies for a quick meal. Serve with a handy rotary-style grater to get guest interacting with the meal. They each swivel on the amount of cheese they want. Totally fun!

My honey knew about beanie weenies, but as you know, there are many variations of this delightful kids meal. I thought I made it up. How 'bout that?
Well, my version of this tasty dish is different from most. It is unbelievably easy to make. It's fast. Great for self-serve portions. But, it is probably not the healthiest meal in the recipe box.

There is no doubt that kids love it, but it is a favorite with mom and dad, too. Make it when watching sports on TV with friends, birthday parties and those competitive card-players you sit at the table with on Monday nights. After all, who doesn't like hot dogs and baked beans. I added my crunchy twist, and it's been my family's beanie weenie recipe ever since.

Here's the recipe for my old fashioned Beanie Weenies, my name for sliced hot dogs, baked beans and Fritos covered in cheddar cheese.

Beanie Weenies
Here are the ingredients.

1 package of your favorite hot dogs
1 can of your favorite baked beans (Bush's original is what I use)
1 lb. cheddar cheese (1/2 cubed and 1/2 grated)
1 bag of Fritos (I like the original size, not the dipping chips or scoops)
1 sour cream (Daisy Brand)
1/4 C brown sugar
1/2 pound honey bacon
1/2 onion, chopped
1 Tsp minced garlic
Pinch of salt
1/2 Tsp cayenne pepper (optional)
2 avocados - cubed (optional)

Weenies: I remove all the weenies from the package and cut into bite-size pieces. Sometimes, I cut the weenies on an angle just to be different.

Baked Beans: I get out my honey bacon and cut 5 or 6 bacon strips into smaller bite-site pieces. I put the bacon into a non-stick frying pan and slowly cook them until tender.

Add the chopped onion to the bacon pan and continue cooking on low for about 2 minutes until the onions look clear.

Add the minced garlic and cook for another minute.

Open the can of Bush's best and pour all the beans at once into the bacon pan.

Add the brown sugar to taste and stir. Add salt and pepper.

Put It Together: Next, add the sliced weenies and 1/2 of the cubed cheese into the baked bean mixture. Cook and stir for another few minutes until the beans are hot throughout.

Give the whole thing a quick stir, slow cook until the dogs are done and the cheese starts to melt, about 10 - 20 minutes at most.

Serve: To serve for each guest, get a bowl and fill the bottom with a handful of Fritos. Ladle the bean and weenie mixture over the top of the Fritos. Sprinkle grated cheese on top the beans, and spoon a dollop of sour cream over the grated cheese.

The whole cook takes less than 30 minutes. I add the parsley mainly for decoration. Set out a big bowl of sour cream so guests can add more if they want to. I put out large cubes of cheddar cheese next to a Classic Rotary-Style Cheese Graterso it's handy for guests to grate just the right amount of cheese they want. Plus, it gives guests more interaction with the food in front of them. Fun!

Mexican Beanie Weenies: I morphed this traditional recipe with Mexican flare by adding 1/2 tsp of cayenne pepper to 2 avocados which I served cubed. Guests could spoon the mix of cayenne and little squares of avocado to the top of their bowl, if desired. It is good. Spice is not for everyone, but this is mild and a real mouth delight if you like Mexican food.

Yummy for my tummy.

That's it for today.
