Boneless Turkey Breast Recipe

It's the no-mess boneless turkey breast recipe to beat all. Yup, it's marching on down to Turkey Day, and I have lots to be thankful for and sharing a meal with family is a memory I am grateful to be able to do.

In past years, Thanksgiving usually means that mom (that's me) bakes a big turkey dinner with chestnut dressing (like my dad "Pop" used to cook up), mashed potatoes and gravy, green salad, two kinds of jello salad, corn pudding, green beans with onions on top, and apple pie and cheesecake for dessert. Wow! I guess we had a feast! But, sadly, I have not made a full-size 18-lb. roasted turkey in a couple of years. Probably more, but whose counting [smile].

Mostly, my honey and I are guests in home of one of our children. We've enjoyed the festivities at Tim's, Kim's and Steven's with so much joy, and a lot of thanks. I am a lucky mom.

We've plated and delighted in some of the finest turkey bites. Yummies from smoked turkey to deep fried turkey infused with flavorings, and of course the regular oven roasted turkey... just like mom used to make.

This year, I wanted to test out the smaller, more realistic boneless breast of turkey recipe that better suits just me and my honey.
It's a smaller portion but still hearty enough for some nice leftover meals and a few sandwiches with mayonnaise buttered bread layered with turkey slices.

Oh, let me pause for birthday greetings, because today is my dottie's birthday. This recipe makes me think of her: She loves turkey.

This roast turkey dinner recipe would make a wonderful birthday dinner: It is perfect for two in size; it is less costly than a full-size turkey; and it's more convenient to make and bake. But before you get started, here are a few tips on the handling of turkey.
  1. It is poultry, so treat it with all the precautions that you would when you choose chicken.
  2. Wash your hands before and after handling the raw meat.
  3. Make sure that all utensils, equipment and surfaces have also been thoroughly cleaned (before and after).
  4. Keep raw poultry away from other foods in the refrigerator. Store safely.
  5. Do not store raw poultry too long out of the refrigerator, a few minutes at most.

Boneless Turkey Breast Recipe

Ingredients

1 (3 lb.) boneless turkey breast, thawed if frozen
1/2 cup (one stick) of unsalted butter, softened
2 teaspoons celery salt
1/2 teaspoon black ground pepper
1/2 cup chicken stock
Deep roasting rack

Preparation

Remove turkey from bag
Do not remove inside "netting"
Remove gravy packet, if it is included
Rinse well and pat dry
Rub softened butter all over the turkey top and sides
Sprinkle with celery salt and pepper


Place on baking pan
Cover pan loosely with foil, but don't let foil touch turkey

Insert meat thermometer and cover

Slide pan into preheated 350 degree oven, and bake for 2 1/2 hours.
My oven runs cool, so I set the temperature at 365 degrees.


Remove from oven when done, move to cutting board and cover with the foil. Let the roasted turkey breast rest for about 15 minutes, and slice into serving pieces. 

In the roasting pan, add 1/2 cup chicken stock or a bit more to the pan as needed, and heat on the stove to reduce drippings. Use the packet of gravy if one came with the turkey package to make gravy, if desired.

Serve with roasted potatoes or candied yams, peas, carrots and a nice green salad on the side.

Makes 6 to 8 servings.


This boneless breast of turkey easily provides two full meals for two. Leftovers can be refrigerated and enjoyed on cold turkey sandwiches for lunch the following day. It's easy with no fuss. Make and bake today!
