Pork Chops with Couscous: Diabetic Recipe

Here's my ever so simple-to-make pork chop recipe for a diabetic and everyone else, too. It took me about 15 minutes total from start to plate.

Pork Chops with Couscous

Ingredients
4 boneless pork chops
1 cup uncooked couscous
1 small potato, peeled and cut into small pieces, boiled until not quite done stage
1 red apple, peeled and cut into julienne strips
4 small plum tomatoes (from the can), cut into 3rds
Reserve 1/4 cup tomato juice from can
2 tablespoons honey
2 tablespoons chili powder
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup fresh cilantro leaves, chopped

Directions
1. Smear pork chops with chile powder, salt, pepper and let stand in covered dish for 1 hour
2. Place potato pieces, apple strips, tomatoes, honey and juice in a bowl, mix slightly
3. Heat oil in skillet until hot and sear pork chops, 2-3 minutes per side
4. Place potato/apple mixture over pork chops, heat to boil, reduce heat, cover and simmer on medium heat for 5 to 6 minutes
5. Make couscous as directed on package

adds to the meal

Plating
Spoon couscous onto serving platter or individual dinner plate. Spoon pork chop half over couscous and half on plate. Spoon potato/apple mixture on top of pork chop and let some spill over on side of plate. Sprinkle chopped cilantro over plate.

Serves 4

Tip: You can substitute the canned tomatoes for thick/chunky salsa if you like a bit more spice..

This recipe is quick and easy it is to make. It tastes divine.

Tip: I serve 2 pork chops and save the other 2 for tomorrow's heat-and-eat dinner.
