How to Make 7-Up Jello Salad

Here's how to make 7-up jello salad for your Christmas table.  This recipe is one of two jello dishes that my kids love and yummed it up at the Christmas dinner table when they were young. I stopped making it for some reason.  Not sure why?  But it's a recipe full of memories.  You don't even feel like it's jello. It's so good.  Jello is not just for kids.  You can even make it with sugar-free J-E-L-L-O.
7-Up Jello Salad Recipe

Ingredients:
7 ounces 7-Up soda (or lemon-lime soda)
2 1/2 cups miniature marshmallows
3 ounces lime Jell-O gelatin
6 ounces cream cheese, softened
1 (4 ounce) can crushed pineapple (drained)
1 cup fresh Whipped Cream (or Cool Whip)
1 tablespoon mayonnaise
3/4 cup chopped walnuts or pecans

Directions:
What you’re going to do is make a hot mixture and a cold mixture, then add half of the cold mixture to the (cooled) hot mixture. That’s the bottom layer.

Hot Jello Mixture. In pan on medium heat, add the 7-up and 1/2 marshmallows together. Add Jello (no water) gradually. Take off heat, let cool down, way down.

Cold Topping: In a separate bowl, mix cream cheese and pineapple until mixed well. Fold in whipped cream, mayonnaise, rest of marshmallows. (Make sure your whipped cream is firm.)

Layer in glass dish:
Add HALF of the Cold Topping to the COOLED Hot Jello Mixture. Spread in bottom of dish or jello mold and refrigerate for 1-2 hours.

When sufficiently set, top with remaining COLD Topping. Cover with plastic wrap, refrigerate overnight.

Top with whipped cream just before serving, sprinkle with chopped nuts.

P. S.  You can skip the “layered” look and just add the cold topping to the hot jello mixture all at once. Put it in your favorite jello mold for a fancy presentation and garnish with strawberries.
