It's the weekend day the home kitchen cook scours the refrigerator and finds a bunch of odds and ends, and puts together some kind of awesome sandwich.
Today's sandwich spectacular is the ever-popular, pita pocket from from
Taste of Home, it's what I call,"Pita Rita." Take a bite and cluck with
delight. It's light and yummy, full of flavor.
If you've never made a sandwich with a pita pocket, this recipe will make you a fan.
Pita is a soft, slightly leavened flatbread baked from wheat flour. It is used in many Mediterranean, Balkan and Middle Eastern cuisines and resembles other slightly leavened flatbreads such as Iranian nan-e barbari, South Asian flatbreads and Central Asian naan, and pizza crust.
Most pita are baked at high temperatures (450 °F or 232 °C), causing the flattened rounds of dough to puff up dramatically.
When removed from the oven, the layers of baked dough remain separated inside the deflated pita, which allows the bread to be opened to form a pocket. However, pita is sometimes baked without pockets and is called "pocket-less pita". Source
Grilled Chicken Club Pitas Sandwich
Serves 2
Ingredients
3 tablespoons mayonnaise
3 tablespoons honey
3 tablespoons spicy brown mustard
1/4 teaspoon salt-free garlic seasoning blend
2 boneless skinless chicken breast halves (5 ounces each)
2 whole pita breads
1/2 cup shredded lettuce
2 bacon strips, cooked and crumbled
2 slices Swiss cheese
In a small bowl, combine the mayonnaise, honey, mustard and seasoning blend; set aside 3 tablespoons. Pour remaining mixture in a large resealable plastic bag; add chicken. Seal bag and turn to coat; refrigerate for at least 1 hour. Refrigerate reserved mayonnaise mixture until serving.
Grill chicken, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a meat thermometer reads 170°. Cut chicken into 1-in. strips.
Spread reserved mayonnaise mixture over pita breads; top with the lettuce, chicken, bacon and cheese.
