This Crab Louie recipe is perfect for a light summer dinner. You could serve this Crab Louie on endive. Endive is in the lettuce family that includes radicchio, escarole and frisee. It has a crisp texture and a sweet, nutty flavor with a pleasantly mild bitterness. It can be enjoyed served raw or cooked.
For the U.S. market, crab meat comes in different grades: Mainly, Jumbo, Lump and Claw. Jumbo is generally unbroken meat with a brilliant white color. Lump grade is generally broken pieces of Jumbo; and Crab Claw is a dark pink color and is a stronger, less expensive choice.
Crab Louie
Serves: 4
8 ounce jumbo crab
3 tablespoon Thousand Island or Russian dressing
2 tablespoon chives
1 vine-ripened tomato, diced and well drained
1/4 red onion, finely diced
2 tablespoon olive oil
Salt and pepper
1 pinch of sugar
1 teaspoon chopped parsley
16 red curly endive leaves
1 whole avocado, diced
Horseradish Panna Cotta:
2 cups fresh horseradish, grated and peeled. Grate in a food processor.
1 cup crème fraîche
2 cups heavy cream
Salt and sugar to taste
4 sheets of gelatin or 1 tablespoon of powdered gelatin
Combine all ingredients in a saucepan, except for gelatin. Bring to boil. Strain mixture. Taste for seasoning, and re-season if necessary. Add gelatin as indicated on package. Pour into individual molds or ramekins. Chill overnight.
Pick through the crab meat thoroughly and remove any shells. Place the crab in a small bowl, and fold in the dressing and chives. Combine the tomato, onion, olive oil, salt, pepper, sugar, and parsley in a small bowl to make a nice relish.
Layer in Stainless Steel Food Rings Mold Set, 3-1/2-Inch; start with mild horseradish pana cotta, next, spoon small mound of crab, creamy diced avocado cubes, top with endive leaves and unmold on plate. Garnish with baby artichoke bottoms and baby tomato halves.
Optionally, create a flower pattern on individual plates with the endive leaves. Place a small mound of the Crab Louie mixture in the center. Layer with creamy diced avocado cubes on top of the crab. Layer the tomato mixture on top of the avocado. Serve.
