How to Make Easy Chicken Fajitas

It's How To Tuesday, and today, Hallelujah. It's chicken fajitas that is so easy to make and quick, too. The word “fajita” means “little belt” from “faja” for strip and the diminutive “ita.”  It describes a skirt steak, because fajitas were traditionally made with grilled skirt steak. Now, they are made with chicken, shrimp and different beef cuts.

The cooking method is to quickly sear meat on a griddle or grill, slice and serve with quickly seared peppers and onions and flour tortillas.

You can serve "put together" like a taco or burrito; or serve as made and offer the warmed tortillas separately so diners can put together their own combination.

Chicken Fajitas
Serves 4

Get out your bowls and spoons and measure out the ingredients.

1 lb chicken breasts, skinless, boneless
1 lime
2 teaspoons sugar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon oregano
1/2 teaspoon cumin
1/2 teaspoon red pepper flakes
1 medium onion, sliced
3 medium bell peppers, sliced
1/4 teaspoon salt
1 teaspoon black pepper
1 tablespoon olive oil
8 flour tortillas

Slice chicken into thin strips approximately 3 inches long and set them in a flat glass baking dish. Squeeze juice from one lime on top of chicken.

Mix together sugar, garlic powder, onion powder, oregano, cumin, and red pepper flakes and sprinkle the spices onto the chicken being sure to coat all the chicken.

Pre-heat your oven to 325 degrees. Wrap eight flour tortillas in tinfoil and put them in a serving dish. Cover the dish with tinfoil, and put it in the oven for about 10 minutes to warm up. It always a good idea to preheat your oven safe serving dish in the oven, as well.

In a large preheated frying pan, heat 1 tablespoon olive oil over medium high heat. When the oil shimmers, add the sliced onions and pepper and sauté 2-3 minutes or until tender. Season with salt and pepper and remove from pan. Place on heated serving dish. Cover with tinfoil to keep warm.

Add chicken to hot pan and quickly sauté until cooked through, approximately 4-5 minutes. Add the cooked chicken to the serving platter.

Place warm tortilla on a plate; add chicken, peppers, onions and serve.

Garnish Chicken Fajitas with salsa, guacamole, shredded cheese and sour cream.

Tip: Try with Caramelized onions. Totally yum!
